We source locally and sustainably to enrich your farm-to-fork culinary experience.

Our locally sourced ingredients come from within 35 miles of the Burleigh Restaurant, ensuring a taste of local Cotswolds produce and kitchen garden ingredients. This approach promotes sustainable dining, supports local producers, and guarantees transparency regarding the origin and quality of our ingredients.

We primarily source ethical meats. Our beef, lamb, and pork come from small hillside farms where the herds forage freely, thus promoting healthier livestock. These farms intentionally rotate their premium beef across fields with different grass types to enhance the flavour profile. Animal welfare is a priority, and we only purchase from farms with the highest standards.

Our meats are dry-aged and lightly salted for 28 days by skilled craftsmen who know how to procure the best cuts. For our Sunday lunches, we monitor the ageing process closely and order whole sides of ‘Striploin’ that we slice ourselves. Our chefs, culinary experts in meat preparation, often introduce unusual cuts for a unique culinary experience.

Our chickens and ducks are organic and free-range. Their diet consists of wheat, oats, and maize, ensuring a slow and ethical rearing process.

Game from local estates is always a sustainable option on our menu, including venison, muntjac, pheasant, and partridge. We maintain strict selection criteria for our gamekeepers, who are all certified and adhere to high animal welfare standards.

All our fish is sustainably sourced and MSC certified, caught off the Dorset Coast by local fishermen, except for our salmon, which is of the highest quality from the west coast of Scotland. The selection of fish varies daily due to freshness, and we always prioritise local sustainable species over endangered ones.

We’re dedicated to reducing food waste through strategies like comprehensive ingredient utilization, precise portioning, and offering leftover take-home options. Our effective composting and recycling programs divert organic waste and recyclables from landfills, encouraging a circular economy. We also prioritize sustainability in our packaging, favoring reusable, biodegradable, or compostable options to cut down on single-use plastics and waste. Our initiatives align with the global drive to lessen environmental impact and promote sustainability.

Also, come take a peek at our bee buddies working away in our on-site beehives! They’re always buzzing around, creating sweet honey. Our tiny winged friends love exploring our lush garden and the miles of surrounding countryside, gathering a colourful array of pollen and nectar we make into our own honey. You can purchase jars of this honey goodness at reception. They’ll surely add a sweet touch to your day!
